Ingredients

2 graham cracker pie crusts
3 8oz packages of sour cream (Tim? Wouldn't cream cheese work?)
2 eggs
1 c granulated sugar (probably too late for Splenda)
1 tsp vanilla extract (get the real stuff)
4 oz your favorite liquor (Jim Beam, Canadian Sunset,
any brandy, coffee liquor, you pick)
OPTIONAL
2 tsp instant coffee
bits of nuts
chocolate chips
brickle
etc.

Empty oven and preheat to 450 degrees.  You did check that 450
on the oven knob is 450 on a store bought oven thermometer
so you don't burn recipes up?
In a large mixing bowl, mix the room temperature cream cheese,
sour cream, sugar, eggs (one at a time) and other things you may
wish to optionally add, Mixmixmix, until it is smooth, careful
not to whip it, you just want to get it all mixed together, not
force air into it.
Pour it equally into the two graham cracker crusts, let it sit
for about five minutes before putting it into the oven, this
allows it to 'rest' and settle into its new home.
Put the two cheesecakes into the oven on a cookie sheet, bake for
about one hour, WATCH THEM OCCASIONALLY, they will go from "Looks
like they are almost done" to "Burnt up" in no time, they are
finished when they are firm in the center, and a butter knife
blade draws out clean.
