Oatmeal Cookies Alve Holmes 1 c vegetable shortening 1 c sugar 1 c packed brown sugar 2 eggs 1 tsp vanilla extract 1 1/2 c all purpose flour 1 tsp baking soda 1 tsp salt 3 c ralston foods quick oats 1 c chopped walnuts, optional 1 c raisins, optional Preheat oven to 350 F and grease cookie sheet. Cream shortening and sugar. Add eggs and vanilla. Mix well. Combine flour, baking soda and salt. Add to shortening mixture and mix well. Stir in oats, nuts and raisins. Using rounded tablespoon, roll into balls, place 2 inches apart on cookie sheet, flatten with fork. Bake 10 to 12 minutes or until lightly brown. Let stand 1 minute before removing to rack.
