Apricot Lentil Soup (Connor Peet) 1/3 c red lentils 1/2 c dried apricots 1 lg potato 2 pts veg stock 3 tbsp chopped parsley 1 tsp cumin Juice of ½ lemon Boil veg stock w/ parsley & cumin. Chop potatoes in to cubes. Put potatoes, lentils, & apricots in pot. Simmer for half hour. Blend, mixing in lemon. Salt & pepper optional.
