Brown Bread Elena Ingredients 2/3 brown meal flour (2 to 2-1/4 cups) 1/3 white meal flour (1 to 1-1/4 cups) tsp brown sugar (or omit and replace with molasses) 1/2 to 1 tsp baking soda/bread soda (you can add 1/2 to 3/4 tsp baking powder if desired) pinch salt 1oz margarine/butter (strictly BUTTER for me) a few sesame seeds (I rarely use) a few sunflower seeds (I rarely use) buttermilk (1-1/2 to 2 cups) (wonderful flavor) Procedure Mix ingredients well; melt butter; add enough buttermilk to make a "porrigy" dough; place in loaf tin, cook in hot oven (~450F) for ~40min or until well cooked (nice and brown and crispy; turn it out when it thumps hollow) Comments She makes two loaf tins and freezes one.
