Relish: 2C cranberries fresh or frozen 1cup fresh oj 1/2 C sugar 2T first quality orange marmalade Mix cranberries, OJ and sugar in a heavy-bottomed saucepan and stir with wodden spoon to mix. Place pan over med-high heat. bring to boil over med-high heat Lower the heat and cook, stirring often until the berries pop and the mixture thickens, aboiut 5-8 min. (Don't walk away from the pot,the relish can burn in a flash. Stin in the marmalade and cook, stirring constantly fofr another 1-2 min. Remove from heat/cool at rom Temp. It will thicken as it cools. Serving: cut waffles into quarters, serve with a spoonful of relish or divvy up the relish and allow each person to dip as desired. A natural with poultry and game, also fab with grilled fish.
