WHOLE WHEAT SOURDOUGH BREAD DAY 1: EVENING BEFORE 2 c whole wheat flour / 8 oz water / 1/2 c starter Put whole wheat flour in overnight bowl / Disolve starter in water (about 1 min) / Add to flour and mix / Cover with plastic (put in thin vegetable bag) / Leave until morning (about 12 hours or so) DAY 2: Mixture from evening before 1-1/4 c water / 1-3/4+ c spelt flour / 1 c- rye flour / 1 tbsp- salt / 2 c all purpose flour (hold some back) Transfer mixture from evening before to larger bowl. Add water and mix until fairly uniform. Add spelt flour and mix. Add rye flour and mix. Add salt and mix. Add all purpose flour holding some back for kneeding. Start kneeding in bowl. Either finish in bowl or finish on counter. Kneed for about 10 minutes (use a timer). Kneed = 1/4 turn / fold / press / 1/4 turn / fold / press / adding flour as needed until silky smooth dough. Dough will be a little tacky but NOT STICKY. Clean larger bowl, spray with pam or olive oil. Cover with plastic. Rise in refrigerator for 24 hours. DAY 3: Turn dough out onto the counter (it will deflate). Form into a ball applying downward pressure all around which will tighten the skin on the upward side (30 seconds to 1 minute). Place upside-down in a floured proofing basket using regular flour to provide a design on the bread and rice flour to prevent sticking (like ball bearings) and add a bit of flour to the bottom (now top) of the bread in the basket to keep the dough from sticking to the towel as it rises. Let the dough rise at room temperature. It is cold so it will be 4-5 hours before it is ready to bake. Preheat oven and sprayed cast iron pot (la cloche clay baker) with lid to 450-475 for baking. Invert bread so it transfers from bread basket to HOT cast iron pot, score, cover and return to oven for 30 minutes. After 30 minutes remove lid and bake an additional 15 minutes at 450. (Might want to do all the baking at 450.) Use an instant read (takes about 30 seconds) thermometer and make certain the internal temperature is about 200 degrees. Cool completely and slice.
